The farm covers 44 hectares in the hills of the immediate hinterland of the Etruscan Coast, near Cecina , with dense forests of Mediterranean vegetation , crops and olive trees in a screw . At the house, a hamlet of about 300 square meters on two floors with private garden and pergolas outside , are aggregated three holiday apartments with a loggia and garden. All the buildings have been renovated in 2006 , maintaining the aesthetics of the materials and the architectural flavor of Tuscan rural tradition . The garden manor entirely designed in 2007 along with the swimming pool with cascading waterfall on the edge of the stone , accommodates the vegetation typical of the Mediterranean favoring evergreen shrubs and flowering climbing in the seasons that define the private gardens of the farm , separating them in a discreet manner from that private villa . The plants of the Mediterranean garden with orchard dialogue , forget where they are planted local species , such as the mulberry tree , the mountain ash, the jujube . A system of rolling hills in the lawn separated by spaces of the garden pergolas shade the large parking area and opens a wide view on the Mediterranean forest with oaks and cork trees and crops of olive groves and vineyards. Near the pool system connects to adjust the orchard and woods to the system of nature trails that accompanies tourists and curious to privileged vantage points with views towards the Tyrrhenian sea and the Tuscan archipelago ( Elba , Capraia, Gorgona and Corsica on a clear day ) .
What are the "pellicce"?
Established the center of the charcoal , the wood was prepared in such a way as to form a sort of central fireplace, on the sides of this fireplace were then backed poles longer, the one above the other, so as to form the conical mound. The next step was the coating of the charcoal with the paltriccia , dried leaves and hay, over which was added at the bottom of the earth, and were instead placed the fur of land or ghiove ( sod ) to form the calzòlo . Everything needed to isolate the wood from the air. At this point, the charcoal was lit by introducing in central fireplace embers and charcoal was subsequently fed night and day with new pieces of wood. The cooking timber began at the top of the charcoal, the charcoal in fact opened holes, smokes, first up and then way, way more down to move the cooking zone. After 7-10 days of cooking coal was ready to be packed! " ... I remember with emotion the days when my grandfather was a coal ... there was a peculiar smell in the air ... and Grandpa always busy , day and night, but happy ... " .
L’Azienda Agricola si estende per 44 ettari sulle colline dell’immediato entroterra della Costa degli Etruschi, in prossimità di Cecina, con folti boschi di macchia mediterranea, coltivazioni arborate a olivo e vite. Alla casa padronale, un casale di circa 300 mq su due piani con giardino privato e pergolati esterni, sono aggregati tre appartamenti ad uso turistico con loggiato e giardino esclusivo. Tutti gli immobili sono stati ristrutturati nel 2006, mantenendo nel gusto estetico dei materiali e delle architetture il sapore della tradizione rurale toscana. Il giardino padronale interamente progettato nel 2007 insieme alla piscina con sfioro a cascata sulla pietra del bordo, accoglie la vegetazione tipica della macchia mediterranea privilegiando arbusti sempreverdi e fioriture scalate nelle stagioni, che definiscono i giardini privati dell’agriturismo, separandoli in maniera discreta da quello privato della villa. Le piante del giardino mediterraneo dialogano col frutteto, dove sono impiantate specie locali dimenticate, come il gelso, il sorbo, il giuggiolo. Un sistema di morbide collinette a prato spontaneo separano dagli spazi del giardino dalle pergole ombreggianti dell’ampio parcheggio ed apre ad un’ampia visuale sul bosco di macchia mediterranea con lecci e sughere e sulle coltivazioni di oliveti e vigneti. In prossimità della piscina l’impianto regolare del frutteto collega al bosco e al sistema di percorsi naturalistici che accompagna turisti e curiosi ai punti panoramici con visuali privilegiate verso il mar Tirreno e l’arcipelago toscano (Isola d’Elba, Capraia, Gorgona e nelle giornate limpide la Corsica).
Cosa sono le Pellicce?
Stabilito il centro della carbonaia, la legna veniva disposta in modo tale da formare una sorta di camino centrale, sui lati di questo camino venivano poi appoggiati pali più lunghi, l'uno sopra l'altro, così da formare la montagnola conica. Il passo su.ccessivo era il rivestimento della carbonaia con la paltriccia, cioè foglie secche e fieno, sopra le quali veniva aggiunta della terra ed in basso venivano invece posizionate delle pellicce di terra o ghiove (zolle) a formare il calzòlo. Il tutto serviva per isolare la legna dall'aria.
A questo punto la carbonaia veniva accesa introducendo nel caminetto centrale delle braci e la carbonaia veniva successivamente alimentata giorno e notte con nuovi pezzi di legna. La cottura del legname iniziava nella parte in alto della carbonaia, infatti i carbonai aprivano dei fori, i fumi, prima in alto poi via, via più in basso per spostare la zona di cottura. Dopo 7-10 giorni di cottura il carbone era pronto per poter essere imballato ! ...ricordo con emozione i giorni in cui il mio nonno faceva il carbone... c'era nell'aria un odore particolare... e il nonno sempre indaffarato, giorno e notte, ma contento...".
